Peanut Butter, Banana and Vegan Bacon Sandwich

And now back to the recipe!

Have you ever resented an idea to the point of liking it? Well this has happened to me with a certain recipe.

While on Pinterest, I saw a delicious pin entitled: “Sandwich for Everyday of the Month”. Most of them looked good {although not vegan or vegetarian, but could easily be made as such}. But there was one sandwich that made me cringe. I’m sure you can guess which:

That’s right, folks. The PB & B w/ B sandwich. The culmination of peanut butter, banana and bacon…? In a grilled sandwich…?

Typical American lunch, I thought to myself. We add meat to everything. We spoil a perfectly decent peanut butter and banana sandwich by adding strips of fried, fatty bacon.

My resentment returned every time I looked at that pin. And then one day, I looked at the image and thought: “I like peanut butter. I like vegan bacon. I like bananas. I like grilled sandwiches. So why wouldn’t I like this?

Peanut butter, banana & Vegan bacon sandwich:

  1. 2 teaspoons crunchy peanut butter {or smooth–but crunchy is the ish}
  2. 4 strips caramelized vegan bacon
  3. 2 slices bread
  4. 2 teaspoons vegan butter
  5. 1 banana
  6. 1 teaspoon brown sugar
  7. Drizzle of olive oil

Directions: 

Turn your oven on to 350 deg. F. Layer a casserole dish with several strips of vegan bacon. Drizzle on your olive oil, then sprinkle on your brown sugar. Leave it until the bacon crisps {about 8-10 minutes-it will harden as it cools}. As your bacon’s baking, slice your banana in half, and then lengthwise. When your bacon strips are finished, let them cool and work on grilling your sandwich on medium-high heat. Add a teaspoon of butter to each slice. On the side, add a two teaspoons of peanut butter. Do this with both sides. It’s a little tricky, but if I can do it, you can do iiiiit! Grill the buttered side and add your banana and bacon.

Add your peanut butter and banana. Once the skillet heats up, the peanut butter will melt and spread smoothly.

Add your caramelized vegan bacon.

Slap on the other buttered side.

Grill.

I did make a few changes to the original recipe. First, one of the slices was smeared with Nutella. Even if I could eat Nutella, that idea seems unnecessarily fattening, so I omitted. Second, I caramelized the vegan bacon because it seemed wrong to do otherwise. I dunno why. I also sprinkled on a small amount of vanilla bean sugar on my bacon that Robert Orth from Calicutts Spices sent me. I love this stuff! They’ll be adding the vanilla bean sugar to their shop soon, so if you’re a baker {or a flavor lover}, then look out for it! It added a sweet touch of vanilla to my bacon strips.

This sandwich recipe isn’t for everyone, but I personally loved the combo of sweet and salty. And the fact that it was quick to prep doesn’t escape me. And while I can’t vouch for it being healthy, I can vouch for it being damn tasty. 

But like I said, peanut butter and bacon and banana, slapped inside grilled bread isn’t for everyone. But I have one recommendation: open your mind to it, because it tastes so good. I did and couldn’t be happier. Quick to prepare. Multi-flavored. Damn tasty. The works.
