RLW Quick Bites: Simple Mocha & 4 Ingredient Butter Cookies:
Chilly mornings always get me excited for a hot cup of coffee. Today, I tweaked my usual cup of Joe and paired it with buttery vegan cookies.
1/2 cup flour
2 tbs-1/4 cup sugar
3 tablespoons vegan butter
splash of vanilla extract
Combine sugar and four. Add butter and mix until crumbly. Add a splash of vanilla extract. Shape into cookies. Bake at 375 deg. F. for 15 minutes.
If you plan to drizzle them in agave (highly recommended) and dash with cinnamon (also recommended), I suggest using 2 tablespoons of sugar.
1 cup soy milk
2 tablespoons unsweetened cocoa powder
1 tablespoon sugar
2 teaspoons-1 tablespoon coffee
In a pot, bring milk to a simmer. Add cocoa powder and whisk until dissolved. Stir in sugar and coffee until dissolved. Add more sugar if needed.
The mocha wasn’t really “my” taste–I’m still trying to figure out why. The original recipe called for Nutella…but since I had none on hand and it’s not vegan anyway, I scrapped that ingredient. Add if you prefer.
