Peanut Butter Chocolate Ice Cream w/ Coconut Rounds

Do you ever have days, maybe weeks where you need some good news? You’re working hard for something-maybe a promotion, a good grade, or a job- but life is stacking high against you. You fight to survive, but there’s a part of you that wants nothing more than to call it quits. Bathroom corner: enter. Fetal position: enter. Surrender mode: activated.

Lately, I’ve been feeling that way. I need some good news in my life. At this point, I don’t care where it comes from or how small it is.

Luckily, I can always rely on good food to cheer me up (and I just realized how pathetic that sounds). Good food or exercise. Today, I wanted good food. Something sweet and something cool, because Winter ain’t got nothing on South Florida. Can someone say “global”? I’ll say “warming”.

I wanted a collaboration of all my favorite ingredients: peanut butter, chocolate, coconut…

For a much deserved pick-me-up, I made peanut butter “ice cream” with coconut rounds. And I enjoyed it with episode after episode of The Twilight Zone, indifferent to how wasteful my day appeared to the ignorant observer.

Coconut Rounds:

Inspired by Detoxinista

  • 1 cup coconut butter
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • pinch of sea salt


  • Set oven to 300 deg. F.
  • Mix all your ingredients into your coconut butter–homemade or store bought
  • Mold the mix into small rounds
  • Place on baking sheet lined with parchment paper
  • Bake for 35 minutes

Bake until the exterior is firm and the bottoms look like this.

I added a rather large quantity of flour to my coconut rounds for a texture that resembled a chewy cookie. Now I can easily add them to my lunch, or if I’m studying in the library I can bring them as a sweet snack.

Be warned: these coconut rounds are seriously addictive. Next time I plan to shape them like cookies and spread jam, nut butters or ganache over them.

Peanut Butter Chocolate Ice Cream:

  • 1 frozen banana
  • 1 tablespoon peanut butter
  • 1 tablespoon chocolate ganache (melt chocolate with coconut oil)
  • 1 teaspoon vanilla extract
  • 1 tablespoon coconut round mix
  • Splash of almond milk (optional–in case the mix doesn’t “move” as you process it)


  • Place all ingredients in a food processor and process until smooth

I crumbled a few of the coconut rounds on top of my ice cream. The rest I dipped into the peanut butter ice cream and devoured. Boy wow. It sure hit the spot.

If you’re feeling down and out for whatever reason, do a small thing that makes you happy. Hiking? Go for a hike. Eating? Go to a restaurant. A movie? Head to the theater. Comfort food? Indulge.

We need these things to keep us sane. Misery may like company, but not our company. We bother it too much; poking and prodding it and saying, “Go away, go away, go away. Goooo. Awaaaay.” Misery gets pretty fed up of us.
