Vegan Tuna Salad Sandwich

Hi and welcome back to Ria Lives Well!

It’s lunch time! Yesterday’s lunch was so simple, delicious and not to mention VEGAN, that I had to share.

As long as you have vegan tuna, vegan mayo (Vegenaise) and vegan blue cheese on hand, mix these ingredients together and voila–you have vegan magic.

Before we begin, here’s my vegan tuna recipe.

Vegan Blue Cheese:

  • 1/2 block extra firm tofu 
  • 2 tablespoons nutritional yeast
  • 1 tablespoon vegan mayo
  • juice of 1 lemon
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt

Add ins:

  • one minced spring onion
  • chopped celery stalk
  • a few dashes of pepper
  • a few dashes of cumin

Mix the tuna with your vegan mayo, then incorporate your add ins.

Toast your bread and pile on the vegan tuna.

Add your lettuce {I added cabbage leaves} sprinkled with a dash of pepper and oregano

Top with crumbly blue cheese

Slather on the best Dijon mustard you can find

Don’t forget the pickles!
